For the pasta roller: You were missing the anchor piece, which is the additional hole near the base of the stand. These are essentially C-clamps that hold the roller to the table, that's why yours was moving so much. The fettuccine roller clogged up because you didn't dust the pasta in enough flour, so it stuck to the roller. To prevent the strands of pasta from sticking together, immediately roll them through flour before hanging to dry.

Oh Tyler. So much I can teach you about making bread. You don't actually need sugar in a bread recipe, it helps a little with flavor but mostly it's for the yeast to eat and create the gases that make the bubble-looking holes in the slides of bread. And you don't slice hot bread because it won't cut very well.

There is a setting on the bread machine where it only kneads the dough. You could have used it for the pasta dough.

For the pasta maker - I had one almost identical to that - there should have been a clamp in the box that fits into that hole on one side which allows you to attach it to your work surface. Some of the issues you were having were due to speed you were cutting - and the pasta needs to be fed directly down into the rollers/cutter heads otherwise they will clog like what you had. When you're doing your first passes, you can also fold the pasta in thirds to get it closer to a square - the final product will still have a curve at each end - you can trim those before cutting to keep the noodles uniform :)

Just two notes, who knows if you’ll ever read them:

1. Salt the pasta water to a mild brine before cooking

2. Smear a liiiittle bit of flour before running the final tagliatelle step. That will prevent roller clogging.

Bonus. Learn how to make the OG Bolognese sauce at home and you’ll be on another planet!!!

I have been a bread maker since 2016, making fresh bread daily. During the pandemic when everyone else could not get bread, me and my neighbors had plenty. I kept that machine going round the clock pumping bread for the neighborhood. When my first one broke My next-door neighbors saw me toss the old one out and they each got me a new one so now I have 3.
