Vegan coconut cookies recipe by Athena Loizides

Our guest of today is Athena Loizides, a Greek Cypriot television presenter, cookbook author and food writer, specialising in Cypriot and Greek cuisine. Athena is going to show you how to cook vegan coconut cookies, a very easy and healthy recipe, with only 152 calories per cookie. The recipe contains no milk, no eggs and butter, 100% vegan.
Here are the info you need to make these delicious vegan and low calorie cookies recipe:
To make 12 cookies:
50 g coconut oil
120 g whole-wheat flour
100 g oats
120 g brown sugar
85 ml coconut milk, KOKO
1 teaspoon baking soda
1 teaspoon cinnamon
100 g rinsed and chopped preserved fruits (here we used bergamot)

Method:
1. Preheat oven to 200 degrees, fan assisted. Line a baking tray with baking paper or use a non stick cookie pan.
2. Place all the ingredients except the chopped preserved fruit in the food processor. Beat until you have a ball of dough.
3. Transfer the dough in a bowl and mix in the fruit. Using an ice cream scoop, scoop out the dough in balls and line on the baking tray. Bake for 10 minutes.
Cool slightly and enjoy!
