Ingredients
2 lbs mini yellow potatoes
3 tbsp extra virgin olive oil
1 stalk celery, diced
½ cup green onions, diced
1 red onion, diced
1 red bell pepper, diced
1 handful fresh dill, chopped
1 handful fresh parsley, chopped
CREAMY HIGH-PROTEIN DRESSING
1 cup extra firm tofu
1 tbsp dijon mustard
½ cup vegan yogurt, I used coconut yogurt
1 lemon, juiced
2 cloves garlic
1 tsp salt

I made this except I used leftover air fryer roasted potatoes (crispy on the outside but fluffy on the inside), and dressed it with this vegan aioli (fresh dill, dried dill, stone ground mustard, dijon, vegan mayo, olive oil, salt and pepper), and added finely diced veggies, it was sooo good!!

I made this! Go EASY on the dill and red onion. Those were the dominant flavors for us. And be patient when boiling the potatoes. If they don't smash, they need longer to cook.
