Easy dinner idea that takes me back to childhood | Noodles and tomatoes | Comfort food

This is a simple dish that we just love. I grew up eating this dish and it is still one of my favorites. I included the recipe in my Volume 1 cookbook.

I ate this quite a bit growing up. We called it “mater Mac”. 😊 I still fix it from time to time. I buy the canned tomatoes that have Italian seasoning in them and use that sometimes. Have a good day!

My mother would make elbow macaroni with stewed tomatoes when I was a kid, and sometimes she would saute onions and peppers to add to it. Thank you, Mama Sue, for stirring that memory for me. 🙂♥️

I love stewed tomatoes. My Grandmother made it quite different. Momma made it the same so me and my sisters copy theirs. We add broken bread, and a little sugar and butter.. Stew it down and a meal in itself. Of course I love tomatoes any which way.

I sautée some onion in bacon grease and also add to that. Then crumble bacon in too. We love it

One of my favorites as a child was Tomato Rice Soup. My babysitter canned home-grown tomatoes, which taste so much better, and she would add rice and a little sugar. It was delicious and her cornbread was like Jiffy, almost like cake (not like the regular cornbread my dad insisted on without sugar). It's nice to have these wonderful memories of simple foods we enjoyed as children and still can!

This sounds really good to me. I actually had pulled out angel hair pasta to make a butter sauce with because I was just wanting butter noodles today but this is another idea that I want to try now. I love how you spoke of your "Aint" Janie. We had "Aints" (Aunts) and "Un-cas" (Uncles) in our family too : ) I am from the Piedmont area of North Carolina.

👋♥️🍅🍝👋Hello sweet friend. My daughter has suffered a stroke is in the hospital, now in therapy. Will be there for quite awhile. Just about a year ago our son, her brother, had a near fatal heart attack, but is doing wonderful now due to God, prayers, wonderful doctors and nurses. So please pray for my daughter. We need and appreciate all of you for this. Now I’d like to tell my food story. My late younger sister use to eat Mac and Maters with salt, sugar and butter. She could make a meal of this and she did it often. Thanks for the memories Miss Linda Sue. I believe that’s going to be on the table tonight for supper. We also love breaded tomatoes. Stale bread, canned or chopped fresh tomatoes, a bit of broth with butter, salt, pepper and sugar to taste, we prefer a little sweetness to this dish.
