I looked for new updates for Windows 7, but I saw that there will be few updates to install until 2023... Are you sure I can work safety with those few updates with Windows 7? Why shouldn't I choose for example Windows Thin PC or Windows Embedded PosReady 7 or another supported version of Windows 7? What is the difference? It's just a personal doubt. Thank you

I was on my old computer I shut it down and it said it was updating and I was amazed I thought it shut off updates years ago

I did the same, and the new update, January 2021 Rollup downloaded. It was 350 mb. I didn't need a bypass tool, came down completely legally. I didn't need a mak key, either. Win 7 pro.
