I went to a place similar to this recently, called South City Kitchen that was also FANTASTIC, I am a breakfast food person all day and some of the menu items were the best I have had anywhere in my 31 years on this earth.

The beets in the cure does more than just add color. Beets contain natural nitrates which are a crucial component in curing salts. That’s why you’re able to cure salmon with beets and regular salt without using pink curing salt.
