So yeeeeaaahhh... servos are very useful for steering, but few other things. While yes, the lift is quite quick, it won't have much torque at even those 11 stud long arms. Also, the traditional Power Functions servos (and most clones) are very long in the direction of the output, so you'd need to use knob gears as to ensure there won't be any gears skipping thus desyncing the mechanism or have a pretty wide front section. The best non-traditional use for servos I can think of is actuating pneumatic switches accurately, and even then, a geared down motor isn't going to be much worse in terms of accuracy
