Food Substitutions: Healthy Ingredient Alternatives

Food choices may be limited due to allergies, treatment side effects or diet changes. Try to switch ingredients that help keep the same taste or texture. In this video we will show you three great ingredient substitutions.

Eggs are used in recipes to bind ingredients and to help baked goods rise. For binding, replace an egg with a flax egg. Combine 1 tablespoon of ground flax seed with 3 tablespoons of water, mix well and let it sit for 5 minutes. This flax egg will have a similar thickness to a real egg.

To help baked goods rise, replace a regular egg with a flax egg with baking powder. Add 1 tablespoon of ground flax seed with 3 tablespoons of water and a ¼ teaspoon of baking powder, mix well and let sit for 5 minutes.

Nutrition Tip: Flax is an excellent source of fibre and may reduce colorectal cancer risk.

Bread crumbs provide a crispy coating and help bind ingredients together. Try replacing breadcrumbs with puffed millet crushed oats, or even cauliflower crumbs. To make cauliflower crumbs, add cauliflower pieces to a food processor and pulse until it resembles crumbs. I know I'm late to the game here (the video is 2 years old when I'm commenting), but vegans will use Aquafaba to replace eggs too. Aquafaba is the liquid in cans of legumes like chickpeas. You can even use it to make meringues. Google to see what ratio you'd use.
