As for RAW support, DxO PhotoLab supports GH6 and is going to support the S5ii by the end of March, apparently.

People who say the s5ii isn't the best for photographers usually say, "well the a7iv has more megapixels." But in tests I've seen the r6ii actually beat the a7iv for sharpness when pared with the 24-70 2.8 which just shows the bigger factor is actually going to be your lens and you really should be comparing your lenses against each other. Either way the s5ii is right there in terms of sharpness (and we're talking about differences so minute you need a special chart just to tell) and smokes both when you use high res mode. I love the Panasonic colors but the "color science" debate is another dumb one because any serious photographer could tweak their colors to taste once in Lightroom and save it to apply to every image imported from that camera or even make the tweaks in-camera. If you cant get good shots with the r6 I/ii, Sony a7iv, or s5ii - the problem isn't the camera. And if you're just buying one camera and slapping the kit lens on it - you really shouldn't even worry about the debate because your lens will be the bottleneck regardless.

For me the s5ii wins for features - the high res, the different crop modes, the live LUT, the live comp, the adaptability of lenses, and the IBIS. The biggest advantage of all is the $500 price difference which when invested in your lens or lighting will have a dramatically bigger effect on IQ than the very minor differences in sensor resolution

ON1 cannot, after a year now, edit RAWs from the GH6. I asked Lumix live about this a couple of streams ago and you confirmed that you work with any vendor that reaches out to you for help with RAW support. ON1 chimmed in, rather surprised that even their latest version just released does not do GH6 RAWs and promised to look into it 🤔
