12 inches is a lot of knife, especially for a home chef. I have one Mercer knife, a ten inch straight bread knife that I love and find the quality great, an exceptional bargain at 13.00 buckeroos. I not only use it for bread but it's excellent for brisket and large fruit and vegetables. I could never make up my mind which I like better, the Mercer or the Victorinox.

What are those other knives on your bag?? Anyway I'm using victorinox 10inch and it's the best for moderate volume of slicing and chopping, bigger knife like this is perfect for huge volume of chopping like 2kg of onions in one sitting like I do ..

In my restaurant the kitchen all uses the 10" Millennia. These knives take can take a serious beating and still sharpen up again pretty quickly. The 12" looks like a freaking monster of a blade.

I love Mercer knives but I could only see using this as a slicer for Il Pastore or shawarma or something similar.

Like your videos, but would like to hear better music. It would make for a better viewing experience, and I would be more likely to want to keep returning. There's a lot of great music out there that would up your game and viewers' experiences considerably.
