how to make khao soi 🍜❤️🔥✨

broth and meat
--------------
900 g of beef (or chicken)
2-4 tbs thai red curry
2 (800 mL) cans of coconut milk
500 mL beef stock (if no stock just water is fine)
2 tbs sugar
2 - 4 tbs fish sauce
egg noodles
toppings
--------
couple shallots
few sprigs of cilantro
fresh lime wedges
pickled mustard greens (if available)
fried egg noodles
how to
------
1) sear meat (not really done in tradtional khao soi but browning meat always makes it better)
2) after searing meat, just toast the curry paste for 30 seconds
3) add a bit of the coconut milk so the paste can evenly be mixed in
4) pour the beef stock (or water) and the remaining coconut milk
5) add the seared beef
6) cover and cook covered for ~30 mins on low after bringing to boil
7) once ready add fish sauce and sugar to broth and mix
8) prepare the toppings by chopping everything and frying some egg noodles
9) serve it up!
