I'm on the dubstep part, and I have to say that Genshin uses to use dubstep music when it's about "beings not from this world", they use the same concept on the Narwhal boss theme, and I'm sure they'll use it on Natlan final boss, or maybe another kind of music that fits more with the abyss, and no the "extraterrestrial" as Arlecchino or the Narwhal.

They're using children's choir because this boss theme represents a character, Arlecchino, who went through a horrible past and it involves their "mother" forcing all of her orphan kids to kill each other until there's only one left in order to raise the one as the mother's weapon for her organization. And Arlecchino now takes over the orphanage of her deceased, "mother".
I guess they're singing for Arlecchino in this context.
