Super Fluffy, Not-too-Sweet, Cooked Frosting

Creamy not-too-sweet frosting that taste a lot like swiss meringue buttercream.

This one takes about 11 minutes worth of beating, but is well worth it.
If you find that this frosting has a gritty texture, it means that you didn't beat the sugar/butter mixture long enough or didn't beat it long enough in the final step. After sitting for a couple of hours the sugar crystals will dissolve.

****NOTE!!!!!**** I made this recently with my Kitchenaid stand mixer and it does a very good job of mixing, I had no grit at all from the sugar. I found that if you mix this enough it won't be gritty at all, if you have gritty texture in it, KEEP MIXING, the sugar will dissolve.

Recipe and directions:

Place 1 cup of milk into a medium saucepan. Add 4 tablespoons of all-purpose flour to the milk and whisk together. Cook over medium high heat, stirring continuously, until it becomes a very thick smooth paste. This can take 3-4 minutes.
Remove from heat and let cool completely.

Beat the cooled flour/milk mixture with 1 tsp of vanilla on high speed for 4 minutes. It will become a smooth paste again.

In a separate bowl combine the 1 cup sugar and 1 cup softened butter together with a electric mixer. Blend on high for 4 minutes.

Combine the flour/milk, butter/sugar mixtures together and beat on high speed with an electric mixer for 3-4 minutes until super fluffy.

Tint frosting if desired and use as you would any frosting.
Makes enough to frost a two layer 8" cake or 24 cupcakes.

Best frosting ever, I am in love~ Never been a fan of standard buttercream, it's just too sweet and heavy for my taste. This frosting is fluffy, creamy and one can adjust it's sweetness without altering it's texture, I actually use half a cup of sugar instead of one cup everytime I make it and it always comes out perfect. It resembles whipping cream in taste but it's a lot easier to handle! It doesn't start to liquefy after constant handling like most frostings do.

OMG! When ever I make buttercream, 80% of the time it is to sweet, it always splits and I am disappointed. This recipe is so light and fluffy, yummy and not to sweet. I love this recipe. I followed the instructions to the .T. and it is perfect. I also read all helpful hints in the comments. I give this recipe a 10/10.

Glad it worked for you! If you leave it in the fridge before using it, it will stiffen up (butter in it will stiffen) you may have to let it come to room temp and may have to beat it again

BEST FROSTING EVER!
I tried this old recipe from other sources, and truly recommend it.

guys.. put the sugar in the hot mixture ( the milk and flour mixture) this way the sugar will dissolve thus preventing your frosting from being gritty and grainy.

For the sugar/grit problem, I've made this recipe just fine by adding the sugar to my flour/milk mixture. This way it dissolves with no problems. I don't add additional sugar when I combine the flour/milk mixture and butter as the sugar has already been added. Turns out perfect. I'm making it tonight, except with coconut flavoring. Thanks again!

This is the best icing, i've make, it taste like whipped cream, not too sweet .. It holds it shape very well when piped out.. It doesn't melt easily... Best for humid country like singapore...leftover can be kept in airtight container, in fridge.. :-) :-)

@amarie1189 Did you use icing sugar for the entire recipe? Or just as an add in?
Hmm... I notice the "curdled" look as I was beating it but it went away with more beating.

@RuthiesCupcakes This always works out for me when I do it, kind of hard to diagnosed what went wrong when I didn't see you make it. I can speculate on reasons like: Did you use melted butter? Did you cook the four and milk long enough? Sorry can`t help

I just made this frosting!!! it's to die super fluffy, creamy and super tasty, it's not sweet at all ...and by the way I used powdered sugar  instead!!!!

@queenbakir Do you mean how many cupcakes you can frost with this frosting? or How many cupcakes the hidden hearts cupcakes make?
The frosting would cover 2 dozen cupcakes and the cupcake recipe makes about 15.
I cup is 250ml (please google for a conversion chart)

I absolutely looove this frosting, it has become one of my all-time favorites, will work with practically any flavor you add in, and holds the consistency quite well. Also works well with gluten free flour(universal) AND lactose free/vegan milk.

@milagros711 I make and freeze cupcakes in batches so I just have to pull out one or two to make a decorating video. Pull them all out to defrost a couple of hours prior to decorating (I've also decorated them frozen depending on the frosting). Organize all of you decorating stuff in advance, frost and assemble, 150 is a lot of cupcakes. Will they all be lions?

I gave this buttercream a try today, took me an hour to put it together ( because i have a crappy mixer). At first I though I had wasted the butter and sugar as it was awfully grainy but then I kept on mixing for 5 mins burst and then I had to switch my mixer off because I was afraid it would explode, did that for a couple of times, then I added the flour mixture and then ta-da!I was in front of the fluffiest and most delicious frosting I had ever made and tasted! thumbs up to this recipe! It was worth all the trouble!

I made this frosting for cupcakes I made for my daughters birthday. This was by far one of the most delicious frostings I have ever tasted. It is more time consuming that the traditional recipe, but if you have the time it is worth it for sure. The sugar does dissolve in a couple of hours. I made this about 3 hours before serving and it was perfect.

finished making this frosting yesterday night and the taste is amazing! thanks dear for the video.
the only change i made was that i added the sugar with the milk and flour while they cooked. dont like gritty icing. tasted great nonetheless. the texture was nice and smooth and fluffy!!
will be icing cupcakes tonight with it! lets see what a day in the fridge does to it!
