I cook a whole hog at 235 and shoot for an internal of 195 in shoulders and 185 in the hams. I personally prefer cherry wood, but you can use pretty much any type of fruit wood.

I like Malcolm because #1 He knows what he is talking about. #2 He has a really good way of teaching without being condescending. And lastly he is himself. God deliver me from tats, freaked out hairdos, on men who are old enough to be grandfathers. If you know your craft you don't have to be freak for people to follow you.

Awesome stuff! Best thing is describing every section where the meat comes from. Looks like only thing you need is a line of people & a couple loaves of bread. Mm mmm mmmm!

Hey Malcolm, in the 6 video series about trimming a hog for competition, in video 6 you say "in the next video we'll show you how to rub this hog" I would imagine this video is that same hog... Any footage between trimming it breaking it down?
