Ingredients:
For the soup: ๐ฅฃ
1 butternut squash
1 large onion
2 tablespoons olive oil
1 tablespoon crรจme fraรฎche
ยฝ teaspoon nutmeg powder
1 teaspoon salt
1 teaspoon pepper
1 bouillon cube
For the bread croutons: ๐ฅ
Bread of your choice
Rosemary
salt
olive oil
3 cloves garlic
Gruyรจre cheese
Instructions:
Cut the butternut squash in 2, remove the seeds and cut into large cubes. Then chop the onion up roughly, and sautรฉ with 2 tablespoons of oil. Cook for 3-4 minutes. Season as required. Add the butternut squash cubes and warm water. Add chicken stock. Cook over medium-high heat (we set it at 3.5/6) for 45 minutes, uncovered.
Meanwhile, prepare the croutons: roughly slice the bread, season with olive oil, spices, pressed garlic cloves and grated Gruyรจre. Spread the bread cubes on a baking sheet (make sure they donโt stick together!) and bake at 180ยฐC for 15-20 minutes. You can now store them in a dry place for up to 10 days.
Once the 45 minutes have passed, remove the butternut squash from the heat and blend the mixture directly in the pan. Halfway through the blending, add the tablespoon of crรจme fraรฎche and continue blending until smooth.
