HOW TO MAKE ROASTED PUMPKIN SOUP (WITH CROUTONS) | CURRIED PUMPKIN SOUP RECIPE

Today we're making Curried Pumpkin Soup (you can also substitute with butternut squash). This is the best way to use up your Halloween Pumpkins (don't waste them). We roasted the pumpkin for this recipe and also made sourdough croutons, which were super delicious and so easy! The ingredients are listed below - follow along with the video for the method. This soup will keep for a few days in the fridge and will also freeze well.

INGREDIENTS
1 medium sized pumpkin (roasted in pre-heated oven, Gas mark 6 for 1 hour, or until tender)
1/2 large onion
oil & butter
salt and pepper to taste
1 tsp cumin seeds
1/2 tsp red chilli flakes (we recommend using 1/4 tsp in case your pumpkin is slightly smaller than ours or leave out if you don't want a spicy kick to your soup)
1/4 tsp paprika
1 tsp curry powder
1/2 head of roasted garlic (use more if you love garlic)
1 1/4 tsp dried parsley (1 tsp to add to pot + a little to garnish)
Double cream (to drizzle before serving)
Sourdough or any dry/stale bread for croutons
