Tapas is more typical spanish, you lost quite a lot of typical catalan cuisine, maybe except the seafood paella, but you haven't experienced the traditional Catalan food.

You do not understand that in your countries there is only one kitchen, but in Spain there are many, it is a country of countries. That's why it does not surprise me that you did not show almost any Catalan dish, the paella is from Valencia, those peppers are from Galicia, as well as the best seafood. You did not eat paella, but a version.
