How would you split specific pages as opposed to the entire doc?

This does not help me one bit. I can't access the Page Break. It's grey. Every single one of my documents, even ones from YEARS ago, have all now been placed onto 1 page. My 100k+ word book is now on one page. I can't access headers or footers. I think word is glitched.
