In Indian cuisine, raita / kachumbar, pickles are to palette cleanser. Since Indian food is spicy, the taste buds need to cleansed frequently to enjoy the food. So these palette cleansers will have sharp taste so that they make you salivate and cleanse the palette. Sometimes raw / pickled onion slices are also used for the same purpose.

Here's a recipe for Chhole Bhature:

Ingredients for Chhole (Chickpea Curry):
- 1 cup dried chickpeas (soaked overnight and cooked until tender)
- 2 medium-sized onions (finely chopped)
- 2 tomatoes (pureed)
- 2 green chilies (finely chopped)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves (for garnishing)

Ingredients for Bhature (Fried Bread):
- 2 cups all-purpose flour
- 1/2 cup semolina (sooji)
- 1/2 cup yogurt
- 1 teaspoon sugar
- 1 teaspoon baking powder
- Salt to taste
- Water (as needed for kneading)
- Oil (for deep frying)

Instructions:
1. Chhole (Chickpea Curry):
- Heat oil in a pan or pressure cooker. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Cook for a minute until the raw smell disappears.
- Add the tomato puree and cook until the oil separates from the masala.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the cooked chickpeas along with some water (if required) to adjust the consistency of the curry.
- Simmer the curry on low heat for about 15-20 minutes to allow the flavors to blend together.
- Garnish with fresh coriander leaves.

2. Bhature (Fried Bread):
- In a mixing bowl, combine all-purpose flour, semolina, sugar, baking powder, and salt.
- Add yogurt and mix well. Gradually add water and knead to form a smooth and soft dough.
- Cover the dough with a damp cloth and let it rest for about 2 hours.
- After the resting period, divide the dough into small equal-sized portions and roll them into balls.
- Take one dough ball at a time and roll it into a circular shape, similar to a puri or tortilla.
- Heat oil in a deep frying pan or kadai. Carefully slide the rolled dough into the hot oil.
- Fry until the bhatura puffs up and turns golden brown on both sides.
- Remove the fried bhatura from the oil and place it on a kitchen towel to absorb excess oil.
- Repeat the process with the remaining dough balls.

at some places or well almost all, you can tell them to lower the spice if you can't tolerate it. My family and I too have a very little spice tolerance despite being Indian, so whenever we go to a restaurant we ask them to lower the spice a bit and they do mostly.

also that Milk type drink that you got can be used in between meals if you find it very spicy, It is called "Raita", it's basically yogurt with some salt and some spices, it comes in variations where some people add vegetables like tomato, cucumber, onion, etc. in it or they just add these fried small crispy balls known as "Boondi" which are made from chickpea flour.

The watery milk with stuff that you had is Boondi Raita. Boondi is made of besan batter (chickpea flour) being deep fried in oil. Usually raita is made from thick curd (yogurt), but the one you had they made it very thin by adding more water to it.
