I had ponchatrain at a place in SE Texas and it was amazing. I tried it at pappadeaux's and was disapointed. That cajun mustard must have been the tangy flavor that was missing. I don't think what I had any cream, though I'm not sure.
I'll have to try this.

This is a great recipe but without more detailed instructions I feel as though beginners would fine it easy to mess up.
