How to turn off gas at the meter at your house

if you need to move some gas pipes in your house or turn off gas from the main supply pipe, its pretty easy to do, just turn the valve horizontal and its closed, vertical is open. After you shut off the main supply. open a gas line at your furthest valve to release any remain gases before working on the line anywhere.

If I do this before replacing a gas shut off valve near my stove, do I need to be concerned about the gas that is already sitting inside the pipe between the meter shutoff valve and the ball valve in the kitchen? Will that gas leak out into the kitchen when the old ball valve is removed?
