It’s not only pro players, in ALL fide registered tournaments with a time control of above 1:30 hours it is necessary, even I, in tournaments have to wright down the moves, and I am 1217 currently in Classical FIDE, and 1389 blitz.

It's also useful for analysis. Also, it is compulsory in all fide rated tournaments, not just grandmaster tourneys

Cheapest way? Yes. Easiest? No way. Those boards they got there are DGT boards. Unless an error occurs, the game is already being recorded and transmitted to other computers. As other commenter added, "not blitz"; certainly! It's already hard to write down all the moves in a 10 min game sometimes. Let alone blitz.

Regardless. Yes its a FIDE rule. The rest are preferences between players.

It also helps the players to retrace their move, to check 50 moves limit, repetition etc

Players also discuss their moves after the match, they sit down and ask why did you do this and that, so the two players go through the game together to help improve. I played a lot of chess and had 1800 fide at 15, this improves gameplay a lot

Just have a birds-eye view camera looking at board that records matches for darn sake. It makes it simpler for everyone. Recordings can be checked and cheats can be easily found out.

one thing i think to keep the calmness of the player and to avoid pressure, think of it a little break between moves.
