You don't grab the chin, you fish hook the nose/eyes and YANK! Doesn't matter how tough you are, someone ripping off your nose or gouging your you're letting go.
If they have a long beard or hair that too can be easily used to stop an attacker. The Romans started the "clean shaven and well groomed soldier" thinking for a reason. No hair to grab during combat.
