Chef Trani took some time to show us a dish that really showcases his past and represents him as a chef. He made a grilled octopus appetizer with char-roasted salsa, avocado mousse, micro-herbs, and grain salad.

He demonstrates how to char octopus (without making it the “worst thing in the world), and shows us how to compose an absolutely beautiful plate

this dish is reminiscent of my Maltese mom-in-law. she introduced me to Mediterranean cuisine, including octopus.  beyond fabulous cooking. she's passed, and I so miss her being in the kitchen with her. her food/smiles meant the world to me.

This looks absolutely delicious. I love how he comments that octopus "...goes one way or the other, " basically, exquisite or grilled car tire. His masterpiece appears to be the former.

Was in hope that Noah would be cooking this making some dirty tentacle jokes. Maybe next time. :(

Can't wait to make this, but I'm not clear on how much boiling is required. Here in NY we can get fresh Octopus ... any ideas for the initial boiling part ?

I am sure this is delicios but this realy looks like something that was runned over by a truck with the small octopus leg being its tail and the things on the left side being his guts, and the green things are the grass on the side of the road.
