My farmers market is absolutely booming with peas right now so today we're making Pasta with Prosciutto and Peas. There’s a lot of hate out there towards peas, and for the haters, I say, grow up... this recipe will change your mind.

with the pea pods (english peas) if you squeeze the top end, opposite to the stem, they made a little pop sound and you can scoop the peas out that way, saves having to pull the stem and ribbon off :)

I love peas! (I thought everybody did, especially kids.) Peas and pasta are great together, but what you’ve done here is over and above any peas & pasta dish I’ve ever come across! Another magnificent dish from humble ingredients.

I might make a small suggestion to those using frozen peas (but at least do try to get your hands on snap peas to toss into the pasta; they are sugary, crisp, and divine). It is my understanding that frozen peas are flash steamed before they are frozen. If you cook them, they will turn to absolute mush and the flavour will be compromised. For those that hate peas because they are mushy and tasteless, this (plus a lack of seasoning) may be why: they have been sadly cooked to death by your parents growing up.

I would follow all of the steps, except for when he throws his shucked peas into the saucepan. They are raw, so they need to be cooked. For frozen peas, I would rinse them under cool (not cold) water to thaw, drain, and add them in the last minute of the sauce cooking before you blitz it. They really only need to heat through, or they lose their delicious pop (and since you’re not blending all of them, it would be good to keep their texture). Then proceed as directed.

Frozen peas can have a bit of a “freezer taste” to them, so I do recommend rinsing to thaw. I personally really love frozen petit pois, though of course the size difference will affect the texture experience (it might be a little less satisfying depending on who you are). But I love petit pois for their sweetness.

I'm not usually a pea fan but this is one of my favorite pasta meals. The key is using pecorino romano and fresh ground pepper.

Great recipe.. I'm using spinach lately. It's delicious. I love this leaves. They have a sweet flavour.
I did put peas one day with the spinach.

Love my snap / sugar peas. Made hamburger soup the other night with lots of fresh veg from garden. Carrots, peas, celery, onion, garlic. Pods and all (minus thread on each side)

I can deal with peas when they are at their absolute tender peak in Spring. After that, for some reason they just turn me off. I always go with sugar snaps. Everyone has his unique preferences. And that's good too!
