2 things you could've done to ease your fight.
1. When Valkyrie blocks, you break their block by clicking your block button twice. Then you may combo attack it after breaking block.
2. When Valkyrie rises up to shoot that homing missile (100% going to land on you and drop your health by half even if you block it), so when it rises up to shoot, you make Atreus shoot arrows 2-3 times to disrupt it or else it's going to half your health 100%, no avoiding that except by disrupting it.

This is probably the easiest valkyrie i used the Blades Of Chaos and everytime she went up i threw the Blade at her, every time she blocks shield bash and use your rumes at every chance after a stun and your set. TY for the video it did help.

This one is kinda easy. On any difficulty depending on your Kratos level armour etc. Just trap here in that area with the door where she begins. By doing your special moves. Also, use rage and Boi's special bow summon. It's not as hard as you think.
