Ingredients:
1 lb. Dry Red Beans
2 tbsp Olive Oil
12 to 14 oz. Andouille Sausage, cut into 1/4-inch slices
1 Smoked Turkey Neck or Drum
½ tbsp. Butter
1 large Yellow Onion, diced
2 Celery Ribs, diced
1 small Red Bell Pepper, diced
1 small Green Bell Pepper, diced
6 cloves Garlic minced
1 tsp. Salt or to taste
1 tsp. Dried Oregano
½ tsp. Dried Thyme
½ tsp. Paprika
⅛ tsp. ground Cayenne Red Pepper, or to taste
Freshly ground Black Pepper, to taste
6 to 7 cups Low Sodium Chicken Broth
2 Bay leaves
½ cup chopped Fresh Parsley plus more for garnish
Fresh Green Onions chopped, plus more for garnish
1 ½ cups Long Grain Rice

Look I’m from Puerto Rico, so we do this kind of red beans 🫘 and rice 🍚and I love it. I was raised eating it and is delicioso! For the beans we use potatoes 🥔 cut in cubes, and that will make the sauce thick. We also put Spanish olives 🫒. For the seasoning we use sofrito( onions, garlic, cilantro, peppers 🫑 🌶️, that we cut and put together in the blender, then use on beans, stews, yellow rice). We make extra sofrito and save it for later or it can be done before, we use Sazón packets, which contains Annatto, for color and taste too. We love to cook with a lot of flavoring a color and taste! We use mostly the GOYA products, including the tomato sauce, which is the best one for us! The other seasoning we use is ADOBO, which is a blend of garlic, salt & blak pepper and some have oregano. We season the meats, we use pork, chicken, sausages, cooked ham. Wait…I’m going to start cooking my rice and beans now, it’s almost dinner time here! Hi to you from VA!

I followed your recipe and made this 2 nights ago. It was soooo delicious, I shared it with my neighbors living to the left and right of me. My wife was very impressed at how perfect and delicious this recipe tasted and she immediately wanted the recipe. My neighbors were also impressed and wanted the recipe. Hi AB!! I FINALLY purchased some Hexclad Pans! They had them at Costco! An employee there said "I found about these from a chef on YouTube". And then we said athe the se time "Smokin & Cooking w/AB?" Made red beans and rice based on your recipe over a propane stove top in a small off grid cabin up in the mountains of northern PA in an old, cast iron Dutch oven. I bet that cabin had never smelled so good! I had a struggle with controlling the heat and couldn't keep it under a low boil with the smallest burner at the lowest setting. The onions and peppers simply disappeared, but it tasted great! Let me tell ya, at 20 F and snow overnight, that outhouse was cold in the morning! LOL! Love your recipes, AB. Thanks for sharing!

I made these and when I tell you they were 🔥🔥🔥. They came out so good. My boyfriend loves them especially him being from Louisiana and I’m from New York. He said they were like his grandma use to make them.

I made the red beans and rice and they were delicious. I used Turkey Kielbasa in place of thr Anduille because that's what I had on hand, but still came out great. Keep em coming.

Went and got the ingredients last night and I'll be enjoying this. Since I'm frying chicken ill be leaving out the sausage but keeping the turkey. This is a stand alone meal and I will add the sausage next time and just have this for dinner. Can't wait lol
