I’ve found the best method for pan sauces is butter, whatever wine is lying around, and whatever sounds good

You can just ad some beef broth wine and reduce season snp and then add cold butter after you take it off the heat. The simplest pan sauce should be like three ingredients. I rarely use flour its great for gravy but not pan sauce

Seriously just a good quality butter to pull off the crust from the pan, brown off and use that as a sauce. If you want to get really fancy, baste with some garlic and rosemary. The only reason for these elaborate sauces is for restaurants to cover up their cheap quality meats.

I would get rid of the flour, reduce the sauce and leave the butter for the end to mix in cold to emulsify :p

Pan > splash of soy sauce > knob of butter > teaspoon of chopped garlic (I prefer more) > mix until garlic has lost its rawness then onto the steak.

A bit of demi glace in a pan with heavy cream is fantastic on steak. Just add them together and reduce to a thicker sauce. Suuuper good and simple as heck

Don't use flour, use gelatine. Also add a twig of Thyme and a knob of butter before you serve.
