You can change the text. You just have to double click the text layer and the editing window will open again.

There's actually a way to get soft edges with the eraser tool without switching to the airbrush subtract method, there is a soft edge option right beside where the correction is, you just click on that while you have the eraser tool on, and there you go eraser tool with soft edges.

Great video! Just a heads up for text, you actually can change the text after you hit submit if you don't like the way it came out by simply double clicking the text and that same edit window pops up again. This makes the tool more feasible to use.
