Minestrone soup is one of the best vegetarian soups in the world (to me anyway). Minestrone is not a strict recipe as such, but more of a guide to cooking up whatever vegetables you have, and turning it into a delicious heart soup that will jam pack your body with vitamins and all that good healthy stuff. Minestrone soup comes from a way of cooking called Cucina Povera, which translates to 'poor kitchen'. Like most good food, it derives from hardship and frugality, and having to make the most of what you have.

This minestrone is packed full of flavour, and guys...it's one the tastiest and easiest soups to make, and Uncle Adam is going to show you how!

To make my version of minestrone soup you will need:
►2 medium onions diced
►3 medium carrots diced
►2 large celery stalks diced
►100g of green beens cut in half
►100g of shredded cabbage, kale or cavolo nero
►200g of small tomatoes sliced in half
►1 spring of rosemary
► 3 bay leaves
►4 garlic cloves finely chopped
►1x400g can of chopped tomatoes
►1x400g can of drained beans (borlotti,kidney,butter bean etc)
►Rind of parmesan (optional but damn tasty)
►About 1200ml of vegetable stock
►About 150g of pasta
►Salt and pepper
►About 2 tbsp of olive oil
Serve topped with fresh grated parmesan and olive oil, and eat with some nice crusty bread. sorprendente!

the battle between beans or no beans in chili here in the states is hilarious. Chili was invented down south near the Mexican border in Texas, so we are no bean family. For me its a texture thing, but I will say i use Northern white beans in some of my soups because they really cook down to mush and add a nice creamy consistency. Cheers Adam, great content...

i like and enjoy watching all your videos, and they are up there with the best of them. will you be doing any videos using quorn or tofu as a lot of people i know are getting bored of cooking with meat. keep them vids comming your doing great work edumacating my son .

'Plethera'...!!! Wow that's a nice cheeky word to sneak in on a Sunday...lol... It's cold and its been raining constantly since yesterday and will be for a couple of days, so this soup is what me and mum need. I might even throw in some cubed Haloumi cheese as it gets soft and squishy but doesn't melt tastes scrummy... Awesome as always my Leicester buddy, so good to have you about... xxx

I always looked upon Minestone Soup as a sort of "Left Overs" Soup.with cabbage almost an essential. It is almost a Vegartarians cure anything Chicken Soup. I don't have this often enough, in fact I cannot remember the last time. That will now change.
I looked at the pile of veg and your pot and I thought "no way" but you managed it easily.

Minestrone is like a full meal, it’s got everything and if you put some bacon in at beginning even better for meat eaters. I use my cheese rinds in soups and risottos like you. My motto is, don’t waste a thing. You’ve inspired me yo make some soon, it’s been a while
