One of our favorite go to dinners on nights when we have no time to cook is a quinoa salad. As long as you have precooked or chopped vegetables and protein and a sauce or dressing dinner is ready in the time it takes to cook up some quinoa. Even less if you have cooked quinoa (or other grains) on hand too!
