Flavourful basil pork stir-fry is classic Thai food at its tastiest. Usually, this dish is made with ground pork, but nearly any type of pork or chicken can be used. Commonly found from street markets and vendors, this savoury dish is easy to make and can turn a weeknight dinner into a feast of wonderful flavours.

INGREDIENTS
250g pork belly, sliced
1 cup fresh basil leaves
1-2 tsp garlic, chopped
8 chilli padi whole or 2-4 chopped

For cooking sauce (combine all)
2 tbsp fish sauce
2 tbsp oyster/mushroom sauce
1 tbsp sugar

For Marinating Pork
1-2 tsp salt
½ tsp ground white pepper
1-2 tbsp plain flour
1 tsp corn flour

METHOD
1. Marinate the pork with salt and ground white pepper for 30 minutes.
2. Coat the pork slices with plain flour and corn flour.
3. Spray some oil onto your Airfryer basket. Airfry the pork slices at 180C for 3 mins and keep aside.
4. Heat a pan over medium-high heat. Add oil, garlic and chilli and stir-fry for 30 seconds to 1 minute to release the fragrance. I used whole chillies so that the whole dish will not be too spicy.
5. Add the airfried pork and then the sauce. Toss until well combined
6. Turn the heat off and add the fresh basil and toss till just wilted.
7. Serve with hot rice.
