My dining companion and I have found that even a well-stored relatively young bottles of wine can vary WITHIN the SAME BOTTLE (cork or screwcap)! This is prominent with the medium+/full-bodied reds we enjoy--the last 1-2 glasses being the most concentrated and powerful as we like our reds!

Question…so do you “plastic wrap” each bottle before you cellar to “lock out” potential oxygen to get to the cork?
