I believe the Venti one is slightly incorrect; he mostly hangs out at Dawn Winery and has people buy him drinks because he has no money, not because bartenders don't serve him. If anything, most bartenders give him apple cider instead.

As for the Noelle fact, it wasn't specifically because Noelle was so eager to help people. Rather it was because Noelle was so ready to help others (and having a hard time saying no) when they need help that many Knights would actually unload their work onto her rather than do it themselves. So basically it's to punish lazy Knights from shirking their responsibilities by giving their workload to Noelle.

And for Klee, she did slip away while Jean was busy, as she wanted to go on an adventure for her birthday. But she gives us the scale she got from the Geovishap because she knew you'd like it. If anything, she wanted the Traveler to come pick her up and take her back to Mondstat before Jean found out. Klee said, and I quote: "Klee got very excited thinking about her birthday, and might have run off too far... Master Jean would be angry if she found out..."

Klee got bored on her birthday, escaped mondstadt and went to liyue, one shot the big lizard and gave the traveller the juvenile jade scale 😂😂. Also, Noelle is such an honest and exceptionally helpful person, shes adorable deserves all the love.
