I have been on the hunt for the perfect mayo! I have tried several different mayos and have had no luck finding one that I absolutely love! I even did the unthinkable, and tried a Hellman’s mayo. That was a bad idea.

In the video, I say that I should’ve added an additional cup of oil in the recipe. I didn’t have more oil on hand. But honestly, it’s pretty delicious as is. You could make the recipe with one cup of oil like I did, or if you like a more traditional style mayo, then make the recipe with 2 cups of oil.

Makes approx 2 cups of mayo
This recipe is gluten free!

2 egg yolks
1 ½ TBSP FRESHLY SQUEEZED lemon juice
1 ½ TBSP whole grain mustard
½ TBSP champagne vinegar (you can substitute white vinegar)
1 tsp salt
¼ tsp garlic powder
2 cups extra virgin olive oil (in the video, I only use one cup)

I recommend using a mixer with a whip attachment or you can whisk it by hand.

Combine the yolks, lemon juice, mustard, vinegar, salt, and garlic powder in a large mixing bowl. If you’re using a stand mixer, then combine those ingredients in the mixer bowl.
Mix the ingredients.
If you whisking by hand, start SLOWLY pouring in a TBSP of oil at a time while QUICKLY mixing. Wait until the oil is FULLY combined before SLOWLY adding another TBSP of oil. I recommend one person slowly pouring in the oil, while another person quickly whisks everything together. This will take about 5-7 minutes.
If you’re using a mixer, slowly bring the speed of the mixer up to its highest setting so the ingredients don’t splatter everywhere! Then start slowly streaming in 1 TBSP of oil at a time. Make sure that the oil is fully combined in with the rest of the ingredients before adding an additional TBSP of oil.
Keep doing this until all of the oil is combined.
You’re done! Super easy!
