Step 1: Make the Dough
Ingredients
* 3 ½ cups flour
* 2 ¼ tsp active dry yeast
* 1 tsp salt
* 1 ½ cups water
* 1 teaspoon olive oil
* 1 handful of limon hot cheetos
1) Combine all ingredients in a mixer.
2) Combine together and set aside in a greased bowl.
3) Allow to proof for 2 hours or at least doubled in size
Step 2: Make the Elote/Esquite Filling
Ingredients
* 4 corn cobs
* 1 tub mayo
* 1 container mexican crema
* 1 container parkay liquid butter
* 1 bottle Valentina
* 1 lime
* 1 cup parmesan cheese
1) Steam the corn in hot, salted water. Remove from the cob.
2) Add in mayo, crema, liquid butter, valentina, lime juice, and parmesan cheese. Toss together and set aside.
Step 3: Assemble and Bake the Pizza!
Ingredients
* 1 finished equite mix
* 1 cup shredded queso quesadilla
* 1 cup shredded monterey jack
* ½ cup cotija cheese
* 1 container egg wash
* 1 container mexican crema
* 1 container parkay liquid butter
* 1 bottle Valentina
* 1 bag hot cheeto limon
* ¼ cup cilantro leaves
* 6 lime wedges
1) To the crust, add the cheese and the equite mix.
2) Bake until slightly cooked.
3) Brush the crust with egg wash and crushed Limon Hot Cheetos. Place back into the oven to finish.
4) Top with a squiggle of crema, liquid butter, Valentina, and Cheetos.
5) Top with cilantro and lime wedges.
