Its an odd and twisted sense of empathy, corrupted by Yuzan’s influence. The last vestiges of their humanity shining through before being clouded over again by their blood lust.

It also makes sense from a strategical standpoint.
Demon slayers are already peak human in terms of skill and strength, so turning them into demons would mean very powerful soldiers to fight against the Demon slayers, not to mention some slayers might have important intel that Muzan and the moons would (quite literally i suppose) kill for, such as the location of the swordsmith's hidden village.
