INGREDIENTS:
🔹 1 loaf ciabatta bread
🔹 Extra virgin olive oil
🔹 1 large red onion chopped
🔹 2 celery stalks chopped
🔹 2 to 3 carrots peeled and chopped
🔹 Kosher salt
🔹 6 garlic cloves finely chopped
🔹 28-oz canned san Marzano tomatoes
🔹 1 cup dry white wine
🔹 4 cups vegetable broth
🔹 2 15-oz cans cannellini beans drained and well rinsed
🔹 1 inch Parmesan rind
🔹 2 thyme sprigs
🔹 1 bay leaf
🔹 1 tsp dry oregano
🔹 ½ tsp crushed red pepper flakes, optional
🔹 1 lb. kale, thick stems and veins removed, chopped
🔹 grated Parmesan cheese, optional

Never told you this, but this is one of my favorites. In the fall and winter, I make every month, maybe twice. I went out and got bread today to make it. Btw, I use whatever sort of green I feel like, might be kale, spinach, or even chard. Your recipes are great, very easy and just about all of them I've tried are "keepers".

This is one of my favorite soups, I had never made it with Wine before or blended beans what a nice addition I add fennel & zucchini too. Thanks for your take I mashed up my version with yours and it has been a crowd pleaser for sure.😊

I skipped the bread and this was so delicious! Let it cool and it froze perfectly in “packets”. Also - your meatball soup is phenomenal!!!! And again freezes perfectly. Goodness I love your recipes.

I made this soup. I absolutely LOVE it !! Definitely a keeper ! Just a small FYI : Suzy, in the actual written instructions, you forgot to add the vegetable broth. I went back to the video, and see it is added after the tomatoes and the white wine, which I figured anyway. But if I didn't have it sitting out on the counter, I may have forgotten to add it.

"mediterranean" soup... This dish is common in Tuscany Region, outside of the Region is completely unknown. Do not think that a regional dish is well known in the rest of italy: in Italy the regional differences are Very Strong.
