I used a whole 5 gal on 300sqft applying with a paint roller, i cant imagine trying to mix those little bits at a time

Curious as to what sort of surface prep did you do? Did you wash with TSP? Did you sand? Did you clean the ceiling in any way .... or did you just start applying mud over 30 years of dust and soap scum?

The floppers of my place textured the cieling by splatting paint-soaked newspaper on it. Do I sand it away gently, or do this??? They did the whole place and it's gloppy and chunky.

Bro next time add a bonding agent to your mud. Sika and quick crete make good ones. Use it for the first coat so it doesn't peel off when you paint!

Just my opinion **
I usually keep it about 40percent thicker than what he did on video on first base coat. Second coat I get thinner but still thicker than what video shows, and we usually do up to 3 coats. That’s level 5 deywall. Smooth uniform finish under any shade of light ….
If your home diyer 2 coats is good enough. Over texture
