1:45, a correction. He says balanced taste of saltiness "shoppasa" not sourness "suppasa". He also mentions that "koubashisa" which is toastiness, or roastedness. He does mention sweetness "amasa" as the captions describe. So really he talks about three flavors, salt, sweet, and roast, coming together, not two.
