lime and basil cookies

i can’t explain how many lime desserts i’ve made this month that haven’t worked because the sun has been non existent here this month!

recipe:
210g plain flour, ½ tsp bicarbonate of soda,  ½ tsp salt, 130g caster sugar, zest of a lime, 130g caster sugar, 100g unsalted butter, 1 egg, 3 tbsp finely chopped basil
1- in a medium bowl, sieve the flour, bicarbonate of soda and salt and whisk together.
2- in a separate bowl, zest the lime into the sugar and rub together with your fingertips.
3- cream together the butter and sugar until light and fluffy.
4- mix in the egg and basil.
5- add the flour mixture and mix until just combined.
6- scoop the cookies and place on a lined baking tray.
7- bake at 185°c / 165°c or equivalent for 10 - 12 minutes.
8- leave to cool on the tray for 15 minutes then cool completely on a rack.
