Check out this mouth-watering Vegan ‘Fish-Free’ Pie 🐟🤤 Perfect for mid-week dinners 🍽 Here’s the recipe 👇🏽
🌱 ½ Pack Lemon ‘Tuna-Free’ Flakes, Defrosted
🌱 150g Vegan Cheddar Cheese, Grated
🌱 100g White Mushrooms, Diced
🌱 1 tsp Chilli Flakes (optional)
🌱 2 Small Celery Sticks, Diced
🌱 1 Carrot, Peeled and Grated
🌱 3 Medium Potatoes
🌱 2 Ripe Tomatoes, Diced
🌱 ½ lemon, Juiced
🌱 Handful of Parsley
🌱 Salt and Pepper to taste
🌱 2 tbsp Olive oil
🌱 2 Cloves Garlic
Top Tip: Add some peas to the recipe for some for extra freshness
1. Peel then chop potatoes into quarters
2. Boil potato quarters for approx. 15 minutes, or until soft
3. Meanwhile, sauté mushrooms for 1 minute with chopped garlic
4. Next, in a baking dish add carrot, celery, vegan cheese, sautéed mushrooms, tomatoes and a handful of parsley (reserve some for garnish)
5. Add Lemon ‘Tuna-Free’ Flakes
6. Season with salt, pepper and chilli flakes
7. Add lemon juice
8. Strain boiled potatoes
9. Add olive oil to the potatoes then mash until smooth
10. Spoon potatoes onto ‘Tuna-Free’ flake filling them spread evenly
11. Add extra Olive Oil on top (optional)
12. Bake in the oven at 190c for 20-25 minutes, or until cooked through, then finish under the grill for an additional 5 minutes for a nice golden topping
13. Garnish with chopped Parsley
14. Enjoy!
