Best Tomato Soup Ever
Recipe courtesy of Ree Drummond
Total: 25 min
Active: 25 min
Yield: 6 to 8 servings
Level: Easy

Ingredients

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Directions

To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.

Now dump in the diced tomatoes and stir to combine. Add the tomato juice.

Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)

Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.

Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.

Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.

Serve the soup warm!

Thanks for this recipe! It's my kids' favorite meal when I serve it with grilled cheese too. So easy and delicious! I use half and half and it makes it a bit less fattening

Anya K that’s not lazy, that’s how real people with a life & lots to do need recipes to be—easy, tasty, accessible. She works on a cow farm feeding 4 kids, husband & help. If you want fancy why in the world are you watching this? Go to barefoot contessa or Giada (who doesn’t even eat her own cooking)

You’re right Ree about this soup. It’s amazing and I’ve made it numerous times. Your show is amazing. Know that I DVR when I can’t watch right away. Love your lodge, farm and beautiful family. Blessings

This soup is the absolute BOMB! SO SO good. I made it for my Dad and his roommates and apparently there was some bowl licking. I did a small modification though: I put in a pound of home made bacon bits that I did up in the air fryer. The soup was really good without the bacon bits but it is a lovely addition!

I like this recipe, yes the chicken cubes and the heavy cream is a bit much, but overall for folks who do not have a lot of money can make this soup and enjoy it. I personally hate the Campbell's soup version and trying to make something with a few ingredients helps for ppl on budget. I don't make this but once a year when I want to have a cheat soup. :-)

Excellent recipe. I love how Ree and her friend bridge the gap between the "extra" (with the sherry), and the simple and easy. Sherry really is the perfect compliment to a cream soup. Try a splash in the bowl in a seafood bisque!

I think her recipes are meant to reach a wide variety of people who can get these ingredients readily... if you don't like her stuff, don't watch it.... there are some great recipes she offers, just like there some you won't like. There are plenty of things Alton Brown or Ina Garten cook that I absolutely can't stand. To each his own.

Instead of adding sugar, add carrots for natural sweetness, immersion blend when all vegetables are soft.
