I do deer steak that way but add parsley, green onion, cream cheese, and mushrooms. Its my favorite venison recipe. Your recipe looks awesome!

My Mom used to make something similar and smaller. She would stuff them w/stuffing. Man I miss those.

No dill pickle? Looks yummy but I like pickles. Seriously, no joke. The dill, garlic and vinegar really brighten it up plus you get the texture to boot. Anyhow, I wouldn't say no to a portion or two of your roulade; with a side of pickle. 😀

Looking to impress, If I use a 9 quart lodge can this be done with 2 at a time? I have no clue why, but people are truly impressed when they see a lid coming off and on. With or with out charcoals on the lid. Most of my guests would be baffled with coals on the lid to be honest.

“Save” in my house means it would get cooked up in the same pan as the roulade and eaten as soon as possible

If you butterflied the roulade you could’ve made two it sounds harder than it actually is just cut with the grain of meat until you can open it like a book.

You made that skillet sound like a machine gun! Hopefully it was already dead meat. I think I'll try using my skillet for that. Looked like it worked pretty good.
