Beef Rouladen - Delicious Beef Rolls from Germany

Rouladen is a German dish made of beef that is rolled up with bacon, onion, and pickles inside. It is simple to make and only requires a few ingredients. I’ve given this recipe a slight French twist.

First, the beef is pounded thin and then seasoned with salt and pepper. Then spread meat with ½ tbsp Dijon mustard. I used Dijon, but traditionally you would use German mustard. Next, bacon or smoked ham, onion, and pickles are placed on top of the beef before it is rolled up and secured with toothpicks or kitchen twine. The Rouladen is then browned in a pan before being simmered in beef broth until tender.

This dish is typically served with potatoes and gravy. For a French twist, Rouladen can also be made with veal instead of beef. Being French, I like it served with mashed potatoes and green beans.

This video is a great way to begin my day because it brings back memories of my childhood. My maternal grandmother was from Germany & both she & my mother would make Rouladen very much like this recipe using bacon instead of smoked ham. I still make it myself & my Scottish wife loves it. This is my favorite German recipe, and I order it every time I see it on the menu. We lived in Germany for three years back in the 1990s, and I had a German friend who would kindly make this occasionally for me. Your videos are such a pleasure to watch, and it’s a special pleasure seeing your darling pooch. I hope the bone was good!

I come from East Poland and this was a very common dish served with dumplings and sauerkraut. Which is also very Polish.
Moreover my Swedish friends also found it very Swedish dish.... so this must be very common in few other places then.

My Oma made this for me as a child whenever I asked and it was divine. I learned from her and now I care for her in her final years, but I haven't made this for her yet! Thank you for the reminder to complete those circles of love and care <3

Made this yesterday. Substituted strips of bacon for the ham since that's what I had in my fridge. Turned out pretty good although I'm sure the ham would have been even better since the bacon is a little chewy.
