Because of the decreased gravity on the moon, the caloric needs of a human would be significantly reduced. The caloric needs listing of "3000" per day seems rather high. Also, moon colonists would not likely be fat to begin with, reducing their metabolism further. With reduced metabolism comes reduced food and oxygen requirements.

The air quality aboard a US Naval submarine has been described as "cleaner than the air on the surface". I suspect that there are easily adaptable atmospheric processing equipment available from submarine and International Space Station technologies that could cut down on the bottled oxygen requirements. A submarine uses hydrolysis of of seawater for oxygen and reverse osmosis for drinking water. Both of which are pretty much off-the-shelf technologies, and would be compatible with a moon colony.

While I understand that your calculations were for a 1-year stay, I argue that an entire years-worth of fertilizer would be unnecessary baggage. Though a specialized composter for plant and human waste would increase shipping costs and oxygen requirements, the concept of your calculations should include that most of the base structures and systems could and would be reused. This makes follow-on visitors cheaper and cheaper, until it becomes economically viable to put science and research sites on the moon as well as expanding the colonies to accommodate an increasing number of people.

If the Earth became uninhabitable, we could just use that colonization technology to build colonies on Earth, right? We'd already have plenty of water/air/soil to use (might need scrubbing and stuff)
Cut out all the rockets, rocketfuel, astronaut training, everything. Just some R&D for the tech + fabrication + transport via airplanes/boats/trucks/trains (if the trains don't suck too much) to places on earth.
