Sorry, I missed the live event. I'm listening now with great interest. I totally agree with adding a realistic buffer during capacity planning. If the product manager wanted to interrupt during the sprint with an urgent requirement, I tried to negotiate and remove lesser priority requirements currently scheduled in the sprint. The advantage is it will give the team balance. During capacity planning, I also split up the time required by; development, test, and bug fix + the buffer. I had found, it helps to prevent rollover stories.
