Italian Lemon Granita 🍋

Ingredients:
300 g sugar (1 cup + 1/2 cup)
1 liter water (4 cups + 1/4 cup)
500 ml lemon juice (2 cup + 2 tbsp)
Lemon zest (optional)

Instructions:
1. Dissolve sugar in water by heating it until fully melted. To enhance the lemon flavor you can also add lemon zest and let it simmer with the sugar-water mixture.
2. Allow the sugar-water mixture to cool completely.
3. Add freshly squeezed lemon juice to the cooled mixture and stir well.
4. Strain the mixture to remove any pulp or seeds.
5. Pour the strained mixture into a shallow container and place it in the freezer.
6. Every 30 minutes, stir the mixture with a fork, breaking up any ice crystals that form.
7. Repeat the stirring process about four times, or until the granita reaches the desired consistency.
8. If the granita freezes completely and becomes solid, let it slightly defrost, then break it into big chunks and blend it for a few seconds until smooth.
9. Enjoy the super refreshing Italian lemon granita!
