It's never too late to make granita! These delicious granitas will cool you down in an instant. If you try them out, please share your creations with me! These can be found in cookbook Sicilian Feasts, on pages 164 and 165.

Simple Syrup
1 part sugar (1 cup sugar & 2 cups water)
2 parts water
Lemon Granita
1/2-3/4 cup fresh squeezed lemon juice
1 cup simple syrup
Grated zest of two of the lemons (zest lemons before squeezing them)
Strawberry Granita
Purée washed and hulled strawberries in the food processor.
Measure equal amounts of strawberry puree and simple syrup.
Coffee Granita
Measure equal amounts of Espresso Coffee and simple syrup.
Serve with Whipped Cream.
Chocolate Granita
2 cups water
1/2-3/4 cup sugar
2/3 cup 100% cocoa powder
1 tsp vanilla extract
3 ounces semi sweet chocolate
Optional: Serve with Whipped Cream
