Brownie-doodles (yield: 2 dz cookies)
12 oz (341g) butter, softened
2 c (400g) sugar
2 eggs
2 tsp vanilla extract
3 c (420g) AP flour
1 tsp (4g) baking powder
1 tsp (6g) fine salt
1 tsp (3g) Everything Brownie

2 Tbsp (18g) Everything Brownie
1/2 c (100g) sugar

1. Cream the butter and sugar on medium speed until fluffy and lightened in color, about 4-6 minutes.
2. Add the eggs one at a time, stopping the mixer and scraping down the sides between the two additions. Finish with the vanilla and mix until incorporated.
3. Mix in all the dry ingredients, stopping when no dry flour remains.
4. Mix the 2 Tbsp of Everything Brownie with 1/4 c (50g) of sugar.
5. Scoop the cookies into roughly 2 Tbsp size portions and roll in the brownie/sugar mixture.
6. Place on a parchment lined tray and bake at 375F* (190C) for 12-14 minutes or until the edge is just set.

*adjust your oven temperature and bake time higher or low depending on the kind of cookie you like

Thank you for talking about this. I hate hearing amateur cooks assume that higher temperature just means shorter cook time for the same result. Temperature can dramatically change results in cooking and baking!

Dude, I have you to thank for me making my awesome cookies now. I never was able to figure out how to make them gooey and soft until you suggested baking at a higher temperature. Now all my cookies are nice and soft just how I like them!!

Hey, I don’t know if you’re gonna see this, but if you do, I wanted to tell you a story that you’re included in, but we never really there.

Basically, in my culinary class class last year, we made puff pastries. We tried, and tried, but we couldn’t figure out why some of them were just bad. Me and my entire class are students so we don’t really know, only the chefs were giving us guidance. Conveniently, I saw your video that you had just posted around that time about puff pastries. I watch the video, learned a lot, and learned why things do certain things within the recipe. I went to class the next day, and made the best puff pastries that anyone has made yet. Taught the entire class how to do it too, and I showed them all of your video. they didn’t believe me at first, which was great, because when I showed them the right way to make puff pastries, it was nice to prove them wrong when they didn’t believe me.

Long story short, thank you for making the videos the way you do, teaching people, and creating a lot of memories that you’ll never even know about.

I work at a bakery but I just sell the sweets. These are the kinds of things my coworkers who actually do the baking think about, and I think that's neat. These shorts feel like a behind the scenes lol
